Each one of our varieties of poultry is full of premium taste and heart-healthy Extra Virgin Olive Oil. We start by seasoning each of our turkeys and chickens with a perfect blend of herbs and spices and robust EVOO and then prepare them to a savory tenderness.
If making your own roasted red peppers, place red pepper directly over flame to blister skin or until charred. Place pepper in a bowl covered with foil for 15 minutes. Cut in half and clean by removing seeds, veins, and charred skin. Slice.
Prepare vinaigrette by mixing EVOO, vinegar, salt, and white pepper in a small bowl. In a separate bowl, toss roasted red pepper, arugula, and 1 tsp. shallots together with 1 tbsp. of vinaigrette.
Lightly drizzle 1 tbsp. of vinaigrette on the wholegrain roll. Layer the roasted turkey breast, goat cheese, dressed roasted red pepper and arugula onto the roll.
For the dressing, whisk together in order all of the ingredients in a stainless steel bowl.
Mix together the salad greens and herbs and lightly dress with the vinaigrette. Separate the salad mix into 4 portions. Artfully place the remaining ingredients on top of the salad greens.
Cut up cubes of bread, cheese, and Creta Farms Gourmet EVOO Oven Roasted Turkey Breast (we suggest 1/2 inch thick slices). Slide the cubes onto a skewer with the other ingredients, alternating. Such as a piece of bread, a cube of turkey, a grape tomato, a pickle, etc.
Include a side of mayo or mustard for dipping.
