Preheat Panini press to medium-high heat.
Heat a large non-stick pan over medium-high heat and lightly coat with non-stick spray. Warm bologna in the pan, cooking until lightly browned.
In a small bowl, combine whole grain mustard and mayonnaise; mix thoroughly.
To make sandwich, use a serrated knife to slice French roll in half. Evenly spread mustard mixture on cut sides of the French bread roll. On the heel (bottom) of the roll, layer bologna, pickles, Swiss cheese and the crown (top) of the bun.
Lightly coat the Panini press with non-stick spray and press prepared sandwich until cheese is melted and the bread is golden brown.
Slice in half and serve immediately.
Spread the mustard thinly on a slice of Creta Farms Gourmet EVOO bologna. Top with a slice of your kid's favorite cheese and roll the two together.
Place the rolled Creta Farms Gourmet EVOO bologna and cheese in a hot dog bun. Hold together with two toothpicks positioned so they look like paddles.
