Or, as we commonly refer to it today: EVOO. EVOO, the purest of all olive oils as it’s derived from the first press, originated in the heart of the Mediterranean. It has been made popular today by artful, health conscious, chefs, who use it to enhance recipes with its rich, smooth, flavor.
Long appreciated by the Mediterranean people, and a staple in their naturally heart-healthy diets, EVOO is rich in omega-9 fatty acids. These fatty acids are natural antioxidants, are filled with heart-healthy mono unsaturated fatty acids, and contain HDL – good cholesterol – which combats the effects of LDL – bad cholesterol. Studies comparing HDL to LDL have shown that by replacing LDL with HDL could reduce the risk for heart disease, gallstone formations, and have a higher percentage rate of preventing colon cancer.
