Oven Roasted Turkey Breast with Roasted Red Pepper, Goat Cheese, and Arugula
Ingredients
- 1/4 Roasted Red Pepper
- 3 tbsp. EVOO
- 1/4 head Arugula
- 1 tsp. Shallot, minced
- 1 ea. Wholegrain Roll
- 2 oz. CRETA FARMS GOURMET EVOO™ Oven Roasted Turkey Breast
- 1 oz. Goat Cheese
- White or Red Wine Vinegar
- Pinch Salt and White Pepper
Preparation
- If making your own roasted red peppers, place red pepper directly over flame to blister skin or until charred. Place pepper in a bowl covered with foil for 15 minutes. Cut in half and clean by removing seeds, veins, and charred skin. Slice.
- Prepare vinaigrette by mixing EVOO, vinegar, salt, and white pepper in a small bowl. In a separate bowl, toss roasted red pepper, arugula, and 1 tsp. shallots together with 1 tbsp. of vinaigrette.
Sandwich Build
- Lightly drizzle 1 tbsp. of vinaigrette on the wholegrain roll. Layer the roasted turkey breast, goat cheese, dressed roasted red pepper and arugula onto the roll.
