Oven Roasted Turkey Breast with Roasted Red Pepper, Goat Cheese, and Arugula

Ingredients

  • 1/4 Roasted Red Pepper
  • 3 tbsp. EVOO
  • 1/4 head Arugula
  • 1 tsp. Shallot, minced
  • 1 ea. Wholegrain Roll
  • 2 oz. CRETA FARMS GOURMET EVOO™ Oven Roasted Turkey Breast
  • 1 oz. Goat Cheese
  • White or Red Wine Vinegar
  • Pinch Salt and White Pepper

Preparation

  1. If making your own roasted red peppers, place red pepper directly over flame to blister skin or until charred. Place pepper in a bowl covered with foil for 15 minutes. Cut in half and clean by removing seeds, veins, and charred skin. Slice.
  2. Prepare vinaigrette by mixing EVOO, vinegar, salt, and white pepper in a small bowl. In a separate bowl, toss roasted red pepper, arugula, and 1 tsp. shallots together with 1 tbsp. of vinaigrette.

Sandwich Build

  1. Lightly drizzle 1 tbsp. of vinaigrette on the wholegrain roll. Layer the roasted turkey breast, goat cheese, dressed roasted red pepper and arugula onto the roll.
