Turkey Teriyaki Stir-Fry

Ingredients (Serves 4):

  • 4 oz rice noodles (prepared per package instructions)
  • 3 C cooked mixed vegetables (e.g. zucchini, broccoli, corn, and water chestnuts)
  • 8 oz Creta Farms Oven Roasted Turkey Breast (diced into cubes)
  • Peanut oil

Teriyaki Stir-Fry Sauce:

  • ½ C low sodium soy sauce
  • 2 Tbsp Creta Farms Extra Virgin Olive Oil
  • ¼ C brown sugar
  • 1 tsp ground ginger
  • ¼ tsp pepper
  • 2 cloves garlic, minced (or 1 tsp garlic powder)

Preparation

  1. Prepare the rice noodles per the package instructions and set aside.
  2. Cook the vegetables and set aside.
  3. Prepare the stir-fry sauce and set aside.
  4. In a wok, place a small amount of peanut oil and add the cubed turkey breast, stir-fry for about 2-3 minutes, or until heated thoroughly.
  5. Add in the vegetables and rice noodles and stir-fry for about 2-3 minutes, or until heated thoroughly.
  6. Add the stir-fry sauce and heat thoroughly. Serve immediately.
