Turkey Teriyaki Stir-Fry
Ingredients (Serves 4):
- 4 oz rice noodles (prepared per package instructions)
- 3 C cooked mixed vegetables (e.g. zucchini, broccoli, corn, and water chestnuts)
- 8 oz Creta Farms Oven Roasted Turkey Breast (diced into cubes)
- Peanut oil
Teriyaki Stir-Fry Sauce:
- ½ C low sodium soy sauce
- 2 Tbsp Creta Farms Extra Virgin Olive Oil
- ¼ C brown sugar
- 1 tsp ground ginger
- ¼ tsp pepper
- 2 cloves garlic, minced (or 1 tsp garlic powder)
Preparation
- Prepare the rice noodles per the package instructions and set aside.
- Cook the vegetables and set aside.
- Prepare the stir-fry sauce and set aside.
- In a wok, place a small amount of peanut oil and add the cubed turkey breast, stir-fry for about 2-3 minutes, or until heated thoroughly.
- Add in the vegetables and rice noodles and stir-fry for about 2-3 minutes, or until heated thoroughly.
- Add the stir-fry sauce and heat thoroughly. Serve immediately.
