Chicken Scallopine Saltimbocca

Ingredients (Yields 8 Servings):

  • 8 slices thinly cut Creta Farms Hardwood Smoked Ham
  • 8 boneless, skinless chicken breasts
  • Thin cutlets, approx. 3 oz each
  • 8 large fresh sage leaves
  • 1/3 C Creta Farms Extra Virgin Olive Oil
  • 1 C white wine
  • 3 Tbs butter
  • Salt and pepper to taste
  • 8 wooden toothpicks

Assembly

  1. Place 8 chicken breasts onto flat work surface. Arrange 1 slice ham and 1 large sage leaf onto each chicken breast. Attach with toothpick.

Preparation

  1. Heat oil in non-stick skillet over medium heat.  Add secured chicken breast, sage leaf side down, cook 2-3 minutes. Turn and cook other side 2-3 minutes. Transfer to an oven proof platter, sage side up, and keep warm in 225 degree oven.

  2. Deglaze skillet by adding wine and scraping brown bits, reduce wine by half.  Add butter to pan and season with salt and pepper.  Continue cooking and stirring for 2 minutes to thicken sauce consistency.

  3. Remove chicken from oven, remove toothpicks, and spoon sauce atop.
