Brasciole – Beef Roulades with Ham, Raisins, and Hard Cooked Eggs
Ingredients:
- 2 lbs. Creta Farms Gourmet Roast Beef, sliced thick
- 8 oz Creta Farms Extra Lean Cooked Ham, sliced in “ribbons”
- 2 cloves garlic
- 1 small bunch Italian flat leaf parsley, chopped
- 3 hard boiled eggs, rough chopped
- ¾ C golden raisins
- ½ C fresh bread crumbs, lightly toasted
- 2 eggs, beaten
- Salt and pepper to taste
- Toothpicks
- 2 28 oz can tomato sauce, or your own version
Preparation
- Combine sliced ham, garlic, parsley, chopped egg and raisins in mixing bowl. Add bread crumbs and beaten eggs, stir to combine.
- Set aside.
Assembly
- Lay roast beef slices out on flat surface. Place 2 Tbs. of filling in center of roast beef slice. Fold in sides and roll tightly. Secure with toothpick, salt and pepper to taste.
- Bring tomato sauce to low simmer in large, deep sided, sauté pan. Gently place beef roulades into sauce.
- Partially cover with lid and simmer beef roulades in tomato sauce for 20-30 minutes until heated through.
- Be sure to remove toothpick before serving.
