Ham and Peppercorn Melange Buttermilk Biscuits

Ingredients (Yields 16 Biscuits):

  • 2 C all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp baking soda
  • 1 C buttermilk
  • 3 Tbs vegetable oil
  • ¾ C finely diced Creta Farms Black Forest Ham
  • ½ C finely grated swiss cheese
  • 8 oz melted butter
  • Freshly ground peppercorn mélange to taste
    *Note peppercorn mélange – combination of white, black, pink, and green dried peppercorns, readily available, and an easy way to give a more complex flavor profile to your recipes.

Preparation

  1. In a large bowl, combine the flour, baking powder, salt, baking soda.
  2. Combine the buttermilk and oil, stir into dry ingredients until moistened.
  3. Stir in the ham and swiss cheese.

Assembly

  1. Drop by heaping teaspoonfuls 2 in. apart onto a non-stick baking sheet (or spray with cooking spray).
  2. Brush tops of biscuits lightly with melted butter, and one or two twists of the peppercorn mélange from pepper grinder.
  3. Bake at 400 degrees for 14-18 minutes or until golden brown.
