Ham and Peppercorn Melange Buttermilk Biscuits
Ingredients (Yields 16 Biscuits):
- 2 C all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ¼ tsp baking soda
- 1 C buttermilk
- 3 Tbs vegetable oil
- ¾ C finely diced Creta Farms Black Forest Ham
- ½ C finely grated swiss cheese
- 8 oz melted butter
- Freshly ground peppercorn mélange to taste
*Note peppercorn mélange – combination of white, black, pink, and green dried peppercorns, readily available, and an easy way to give a more complex flavor profile to your recipes.
Preparation
- In a large bowl, combine the flour, baking powder, salt, baking soda.
- Combine the buttermilk and oil, stir into dry ingredients until moistened.
- Stir in the ham and swiss cheese.
Assembly
- Drop by heaping teaspoonfuls 2 in. apart onto a non-stick baking sheet (or spray with cooking spray).
- Brush tops of biscuits lightly with melted butter, and one or two twists of the peppercorn mélange from pepper grinder.
- Bake at 400 degrees for 14-18 minutes or until golden brown.
